A Wedding at Unionville Vineyards

Wedding planning season is in full swing, and I am looking forward to writing weekly (or hopefully more often) blog entries that celebrate the fabulous local venues where we cater special events.

This September wedding at Unionville Vineyard was so unique and beautiful.

I have to say, Unionville's Ringoes property boasts some of THE most breathtaking views that there are in NJ. B+G, Mary and James, enjoyed a perfectly picturesque ceremony on the back lawn of the charming brick manor house on the property, which overlooks rows and rows of thriving grape vines. Depending on the season, the vines offer a vibrant green, or autumnal golden backdrop to wedding ceremonies.

Following the ceremony, cocktail hour was enjoyed inside the winery, in the Barrel Room and in the fieldstone lined Cave Room. Guests sipped on Unionville's award winning wines (Cam Jam is a favorite of mine!) while grazing on an Artisan Cheese Table featuring local NJ cheeses and early Autumn fruits. Seeing the inner workings of the winery serves as a wonderful conversation piece for guests, who enjoy perusing while mingling in this large, lofty space.

A four course plated dinner and dancing followed, with guests overlooking the nearby farms and hillsides under the lantern-lit tent set alongside the winery. After dusk, the burlap accented cake, adorned, of course, with grapes, was cut and served in the Barrel Room where guests continued to dance the night away.

Unionville Vineyard's charm and character sets the stage for unforgettable weddings and events. Visiting Unionville is like stepping into the best kept secret countryside around; a wonderful feeling while celebrating very special occasions with friends and family!

The Raritan Inn Barn

The arrival of beautiful Autumn in New Jersey was felt throughout every moment of this charming wedding last weekend at The Raritan Inn. The bride and groom rented The Inn Friday - Sunday, and so enjoyed a rehearsal dinner on the grounds, a full day and night of an amazing wedding celebration, and Sunday breakfast with close friends and family.

The picturesque B&B on The South Branch of the Raritan River includes a restored barn, with a warm wood interior. It is the perfect setting for a unique barn wedding experience that is rich in character. The landscape and property, including the river path to a riverside, perfectly private ceremony spot, leave guests feeling as though they have escaped to the country for the day.

Guests were greeted last Saturday and invited to enjoy Hot Mulled Local Apple Cider and Brewed Iced Tea as they wandered the river path. Then cocktail hour was enjoyed on a lawn behind the barn, with the working full bar set in the quaint "Fisherman's Shed".

Following a plated salad, buffet fare included Golden Roasted Chicken Breast with a Chestnut and Cornbread Stuffing, Pumpkin Ravioli with a Sage Brown Butter, a Spud Bar, Roasted Veggies and Artisan Breads.

A Java Bar was featured with the wedding cupcakes, and guests took away Terhunes Orchard Cider Donuts in personalized brown bags.

This October wedding was "spot on" in its delicious flavor of fall!!

There is something so rejuvenating about the aroma of roasted butternut squash, sage, browning butter, and apple cider in September. And what better back drop than a historic red barn and field stone Mill on the Delaware River?

This couple's ceremony in front of the Saw Mill on the property was followed by a cocktail hour that featured a St. Germaine Cocktail and NJ Artisan Cheese Table. Butlered fare included Caramelized Onion and Goat Cheese Tartlets, Bite Size Crab Cakes, Focaccia Pizza Bites, and Ahi Tuna on Wonton Crisps with Avocado Cream.

Dinner on the main level of The Mill included a festive pairing of seasonal features and crowd pleasing comfort food. Chef's carved a Whole Roasted Pig served with a Coffee BBQ Sauce, while guests made their own Soft Shell Fish Tacos. Dinner was rounded off by items including French Fries in Parchment Cones with Chipotle Aioli, Jersey Corn Fritters with an Apple Compote, Butternut Squash Ravioli, and Grilled Vegetables with a Basil Pesto Drizzle. From a menu planners perspective, I have to say that September is one of the most plentiful times in NJ. On the cusp of the seasons, we are able to still highlight summer bounty, while also incorporating the early autumn harvest ingredients.

Dessert, instead of traditional wedding cake, was a sweets station with Espresso Cookies, Pumpkin Chocolate Chip Bites, and Coconut Macaroons. And though a gelato station may not be a typical Fall offering, it was a total winner with the Bent Spoon flavors featured: Blood Orange, Dark Chocolate, Apple, and Sea Salt Vanilla Caramel. Guests paired the refreshing treat with Java Bar beverages.

An End of Summer Tented Wedding

This wedding, on the grounds of a Princeton private school, was a dream! The lush grounds were the perfect setting for the two very special ceremonies - one Hindu and one Christian. While the B+G took photos and changed (as traditional Indian attire was worn during the first ceremony), guests enjoyed tea and cookies. Then, cocktail hour on the lawn of the manor house was followed by a seated dinner under the elegant tent. Our menu featured Local Greens and an Eggplant Napoleon, Pistachio Crusted Salmon, Filet Mignon, and House Made Ricotta Gnocchi with Roasted Squash and Sage Brown Butter sauce.

Guests danced the night away and enjoyed the delish lemon wedding cake and chocolate covered strawberries until the B+G were sent off in a Rolls Royce while guests waved sparklers in farewell.

A Garden Chic Sayen House Wedding

This Sunday wedding at Sayen House and Gardens was charming from start to finish! The blue skies and gorgeous landscape of Sayen Gardens were a perfect backdrop for our B+G's ceremony, and cocktail hour on the lawn was festive and quaint. Guests enjoyed Gazpacho and Crab Claw Shooters, Caramelized Onion and Goat Cheese Tartlets, Fig Marscapone with Candied Bacon atop Tuscan Toasts, and Skewered Blue Cheese Stuffed Mission Figs Wrapped in Prosciutto, while sipping on Belini, Freshly Brewed Iced Tea and Lemonade, Izzy Sodas, and full bar cocktails. Upon finding their escort cards clothes-pinned to an antique window strung with twine, guests took seats at their tables, which were overlayed with Jute fabric (which is a burlap like material that is soft and does not shed). They dined on a buffet including rack of lamb, a summer seafood grill (of scallops, shrimp and mahi mahi), cous cous, grilled vegetables drizzled with basil pesto, and panzanella salad. Dessert was a perfect pairing of wedding cupcakes and seasonal pies.

Our bride's choice of details for her wedding, including fresh seasonal ingredients and classic summer fare, along with perfectly adorable blue glass mason jar centerpieces, farm flowers (Dahlia Floral Concepts) and jam jar favors covered with brown butcher paper came together beautifully! The inherent charm of Sayen House, which has classic craftsman style woodworking and pretty rooms overlooking an exquisite garden, set the stage perfectly for her whimsical touches.

Family Style at a Barn Wedding

Here are some photos from a recent wedding that we catered in a restored Barn on a farm property in Bucks County.

Following a tented ceremony outside, guests enjoyed cocktails and hors d'oeuvre in the front section of the barn, which is divided into two, spacious sides.

Guests then found their "Escort Card" tied on a flower in mason jars, and made their way to tables marked by centerpieces of the coordinating flower (loved this touch by Dahlia's Floral Concepts!)

Dinner was served in one of my very favorite styles - a plated first course salad of Baby Greens with Sliced Jersey Peaches, Candied Pecans, Goat Cheese and a White Balsamic Vinaigrete - followed by family style main fare. The one long (90+ feet long) table lent itself perfectly to an easy passing around of yummy comfort food dishes including Lemon Chicken, Roasted Sausage with a Fennel Pepperonatta, Baked Ziti, and Panzanella.

I love that this couple chose to mirror the rustic barn setting with deliciously fitting comfort food. Both were jazzed up, the barn with unique square lantern lighting and burlap table runners...and the food with flavorful local ingredients and thoughtful presentation.

This wedding was a great example of a perfectly laid back ambiance pairing with just enough elegant touches to create a unique guest experience and super fun party!

A Picture Perfect Farm Wedding

At a fairy tale wedding this weekend on a Bucks County farm, our bride chose pretty strawberry accents as a way to complement her deep pink and lime green color palette.

Strawberry lemonade, adorable strawberry jelly jam jar favors, and a basket weave wedding cake decorated with fresh strawberries were a few of the sweet, fruity details. The jam jars were decorated with personalized labels that read "Spread the Love", with the B+G's name and wedding date on them, such a crafty touch!

After riding in on a horse drawn carriage in view of guests who were seated facing a picturesque meadow, the ceremony took place on the back lawn of the stone farm house. Then guests walked down to the pool side cocktail hour, while we butlered Summer Breeze Cocktails (a Malibu Bay Breeze, light pink in color) and white wine. Facilitating guests getting their first cocktail was the goal, and butlered cocktails are a great way to diffuse the initial bar rush. Cocktail fare featured passed hors d'eouvre, a summer salsa bar, and an artisan cheese table. And in a full, well planned use of her parents' property, our bride then invited guests to the 60x90 reception tent which was set on another grassy area near the rustic red and stone barn and guest house. A stations style dinner of Rosemary Encrusted Beef Tenderloin, Grilled Salmon with Tropical Salsa and Ricotta and Basil Ravioli was framed by a plated first course salad of Baby Greens with Sliced Peaches, Toasted Hazelnuts and Shaved Aged Gouda.

Hosting your wedding an a friend or family member's well suited property is an extra special way of personalizing the day, and a great avenue to creating special memories in a venue that you will likely enjoy for many years.

Salsa Bar + Sangria

Cocktail hour is the perfect time to feature fun, crowd pleasing favorites, especially on the cusp of the summer season! At a wedding this weekend we offerred a "Summer Salsa Bar" presentation station. The spread includes lime scented house made tortilla chips for dipping in: mango black bean salsa, strawberry balsamic, salsa verde, fire roasted tomato salsa and, of course...guacamole. Presented in the company of white and red sangria, the salsa bar is festive, and SO yummy!

Another favorite Emily's feature, the Prosecco Bar, was also a highlight at this wedding. Guests enjoyed choosing from seasonal prosecco drinks including Lemon Pop, Mango Mimosas, Strawberry Smash, and Lavendar mimosas. Chef made fresh mixers such as lavendar simple syrup, mango puree, and lemon syrup set the refreshing cocktails apart as elegant and exceptionally flavorful!

And the perfectly simply decorated, elegant cake at this wedding offerred guests three flavors to choose from: carrot, wedding white with sliced strawberries, and chocolate espresso!

Farm Wedding

Here are some images from a wedding last weekend at a local private farm.

Guests found their escort cards creatively tied to an apple tree near the ceremony, and they were greeted with Freshly Brewed Iced Tea and Lavendar Lemonade set in front of a quaint red farm shed.

After a cocktail hour on the front lawn guests were ushered into a fully floored 40x100 pole tent set inside of a horse ring. The lush surroundings of the wooded property were drawn inside the tent by the use of small trees adorning the centerpoles. This touch, along with umbrella bee lighting, brought the high ceiling of the tent to a comfortable, intimate level.

Another creative touch under this beautiful tent was the hanging chalk boards detailing the plated dinner options. This rustic chic touch was pretty, functional, and will be a really fun keepsake for the B+G.

Four Weddings Win

Emily's recently catered a wedding for a lovely couple, Marisol and John, which was filmed for TLC's reality show Four Weddings. Marisol,who competed amongst four brides for the "best wedding" tied to win an exotic honeymoon!

We are so happy that our food, one of the very important criteria for the bride judges, received rave reviews. When the show aired on May 6th we watched on the edge of our seats, cheering when John stepped out of the secret winners limo with a rose for his bride.

Marisol and John's wedding was on February 12th 2011, Valentine's Day weekend. Their reception was held at Crossroads Theater in New Brunswick, NJ. As guests arrived, they found their "theater ticket" escort cards, and then moved along to cocktail hour on the theater's stage. The lighting specialist at Crossroads cast an image of the bride and groom's names and wedding date on the theater curtain, and the candlelight, music, festive bars, and of course delicious butlered hors d'oeuvre created an ultra chic lounge-like ambiance.

Details from a garden chic Friday wedding in Princeton:

Grey, white and burlap fabrics, paired with gorgeous blush roses, peonies and spring green ferns made for a pretty, and very crisp table scape at this wedding.

Also fun and unique was our bride's use of antique shutters as escort card holders.

The organic design of buttercream ribbons on the wedding cake helped draw together another garden element. The fantasy flower on the top is made out of real sugar! And after enjoying the cake's pretty design, guests enjoyed the surprisingly vibrant red velvet cake with cream cheese frosting inside.

Signage: a practical and adorable touch at a local farm wedding last weekend.

This pretty, painted sign nailed to a mature treee off of our client's driveway pointed guests towards a cocktail hour on the back lawn of a gorgeous farm property. "Mint Limeade Cooler" made with mint tea infused vodka and agave awaited guests at the bar, along with a wide variety of delish passed hors d'eouvre.

Letting guests know where their first, very important stop is when they arrive on a private property is a nice idea. And brides.....have fun with your sign designs, make them personal and unique, like your special day!

The favor boxes were sourced at Michael's and were stamped with a chocolate brown monogram stamp. The cupcakes were made by a first rate baker. The flowers were provided by Dahlia's in Penningon, and the day came together by all of those who participated in the Greystone Show Case.

Candy bars are about plain, old fun. You can dream, look around, and pull together a station worth comenting on by incorpating hued candies and everyday elements. Using different ribbons provided an opportunity to display a whimsical and a practical side to mirror or juxtapose the selected candy. The linen, Cascade, provided by Brillman's Rental Barn, was the perect canvas for staging (see it in the previous blog incarnated in the color apple green).

Round table or banquet style, a candy bar can truly come together. Incorporate your surroundings, embrace the day, and go with what you have.

Winter Candy Time

January was a packed month of winter wedding showcases for us. We were at the Prallsville Mill annual winter show case on the 15th and then we partook in a showcase at Greystone Manor House in Newtown on the 23rd. At both showcases, we indulged our sweet side by highlighting the design of a candy bar. The set came together organically, as most things do, with a wooden bench pulled from an icy front porch, a variety of pink, green, and festive candies, and adorable stamped favor boxes. The thing learned is that it is perfectly fine for design to be inspired by a variety elements: let the world around you inform, let your senses wander and think in color. Candy apple green and berry pink were the flavors of the day.

We found the favor boxes at Micheal's craft store--for a bargin. The stamp was inspired by the timeless bridal trend of using a monogram, but the best part is that guests were encouraged to load up their boxes with sweets to take home to remember the event.

When designing a candy bar let this rule guide you:

Fun. Fun. Fun.

Fun design with ordinary, everyday objects is the best and easiest approach. It is truly fun to breathe new life into daily objects by repositioning them with either like-minded or unexpected objects to create a specific environment.

Two Sunday's ago, we hosted a Summer Showcase at Albemarle in Princeton. The day was a lot of fun and featured a variety of local wedding and event vendors and highlighted a few things that we think are fun and exciting including: a digital photo booth, a cappuccino bar, and a customized prosecco bar.

Our prosecco bar featured mango mimosas, strawberry smash, lemon pop, lavendar & sage bellinis, kir royal, and a classic champagne cocktail.

An autumn or winter twist could be spun to create a seasonal prosecco bar anytime of the year. For autumn cocktails you could consider apple cider spritzers and candied ginger sugared rims with a variety of bubbly + juices.

Winter prosecco bars could highlight white cran spritzers, pomegranate, and bloodorange.

Thanks to all who came and to our featured vendors for participating. Special thanks to Brillman's Rental Barn for coordinating the rentals.

Creating a Farm Stand

We wanted to showcase the local produce for this crudite display by designing a creative "farm stand" for guests at this wedding to enjoy. One fun feature of the farm stand is that the centerpiece is a portable clay planter that we potted white petunias in. When potting the petunias we inserted a 2" wide pvc pipe in the center of the soil, so that we could stick the white umbrella into it, thus creating portable shade for food displays.

Things We've Liked: Wedding Spring Season

Spring is a daring time to go for alfresca dining, but one of our spring brides, dared to do it, and the results were stunning.

This wedding took place on the Delaware River in Stockton, New Jersey. The setting is perfectly rustic with the red barn as a back drop.

Crisp white linens and home-made burlap runners (which were perfect in every way), complemented the natural green environment and provided the most dazzling under the stars feel. Additionally, this bride gave all of her guests a variety of succulents; a tribute, surely, to her California home.

Featured above are a cappuccino bar and three separate cakes for dessert. The cappuccino bar was a huge hit. It was a hot day, and because we had an espresso machine and a few shakers, we were able to make all of the guests favorite coffee drinks, ICED!

Instead of opting for a single flavor traditionally tiered cake, this bride decided to offer three unique flavors to her guests. Chocolate-chocolate, chai, and lemon butter cream were the flavors this bride decided to go with.

In summary: you never know what the weather will hold, more is more---not less is more, and people really love their coffee!

Need ideas for a fun, new appetizers? Why not try petite grilled cheese sandwiches and bite size guacamole bites in a black bean cup. Try experimenting with different combinations of cheeses and bread to dress up the petite grilled cheeses. We like gruyere cheese with sourdough bread and brie cheese on black olive is a nice combination as well.

Guacamole Tip:

Leaving the avocado nut within the guacamole mixture until the time when you are serving it will help preserve the life of the guacamole and will lessen the occurance of browning.

Pistachio and Raspberry linens make a fun, yet sophisticated pairing.

Forced tree blossoms combined in a tall vase with pale yellow tulips make a bold spring-like statement.

Simply Nic's artisan shortbread is a really unique and tasty idea for wedding favors, and as an added bonus they are made locally.

Our new favorite linen, cascade, is anything but boring; it's texturized and in this photo the color is penny. We paired it with gold satin napkins and mahogany chevari chairs.

Honeydew with a sheer organza overlay is garden perfect. A popular wedding idea we've encountered with spring brides this year is a formal "tea" style reception.

You may have noticed the exquisite floral arrangements we used as center pieces on our showcase tables, and we have to give a big thanks to Dahlia's Floral Concepts of Pennington for providing these and so much more.

Demystifying Duxelle

These little beauties are a real treat to serve your guests, but certainly cause a few eyebrows to raise when being offered. "Wild Mushroom Duxelle" you'll proffer and surely you can expect a mixed array of reactions on the first round of passing. Part of the eyebrow raising is simply caused by how similar duxelle sounds to duck, but do not be fooled -- there is no duck in duxelle.

Our chefs use a combination of finely chopped oyster, shitake, button, and portobello mushrooms to make their version, which they add herbs and shallots to and slowly simmer in butter until all of the liquid has cooked off. You can add duxelle to a variety of dishes including soups, as a topping on a mashed potato bar, or as an enhancement to any number of sauces.

We like to serve our duxelle appetizer in a phyllo cup. Heat until warm then top with a dab of creme fraiche and chopped chives.

Brie With Pecans

(1) Cup Sugar

(1) Cup Water

(2) T corn syrup

(3) Cups Pecans

(3) oz. butter

(4) oz. heavy cream

*Combine sugar and water in saucepan with corn syrup. Simmer until it is a rich golden brown.

*Add pecans, butter and heavy cream, stir to combine

*pour over top of brie on a pedastool

*you'll need a good wooden spoon or a high heat spatula :)

This is a wonderful holiday appetizer. When we serve more than (1) brie at an event we like to vary their sizes for display effect.
